Our poulty is as diverse and wonderful, we have chickens, ducks, and turkeys. We currently have 90 laying hens with 6 roosters. They are raised on pasture and are given a small ration of supplemental of laying ration to keep eggs coming for you. Our flock produces brown eggs, with a dark orange yolk. The orange yolk is from days in the sun, fresh air, and fresh food.Along with our eggs, we also offer whole chicken at different times throughout the year. We never freeze any of our poultry, its always processed the week before, so its easier to cook, better tasting, and ready to amaze. We also offer "stew" hens, nothing is better than your own chicken stock, that tastes like home. Our future plans include incorperating heritage chickens into our flock to help reintroduce the great taste that they offer.
Our Ducks are Rouen ducks, a Heritage breed that has the marking of mallards. They are a meat breed, that is wonderful on the plate. Being a meat breed, we do not get many eggs, but when we do, they make pastries and cakes even more succulant and moist. Duck eggs are known throughout pastrie shops as the best for baking. We have amazed friends with the taste of our duck, the moist dark meat with fresh taste. The heritage breed takes longer to grow, but the taste, is worth the wait.
Our Black Spanish Turkeys are also a heritage breed, originating in Spain, from american turkeys. They grow slower then modern turkeys but the taste is the best turkey you will ever  taste. Slow foods Ark of Taste has listed the Black Spanish as a 5 out of 6 for flavor. Our turkey flock consistes of 12, with one breeding trio to keep our flock going year after year. The livestock conservancy lists the Black Spanish Turkeys as threatened. We offer our Turkeys for thanksgiving, with the turkeys ready the week before.
